Yes. A rotation is agreed up front so the same dishes do not repeat back to back.
Who sets the buffet up?
Our own staff deliver, set up and clear. It is not left at reception.
Can we change the head count day to day?
Tell us the working range and we cost against it, with the count confirmed ahead of each delivery.
